We opened Metro in 1996 on a quiet corner in Dublin’s South William Street in a mid-18th century building. Having worked in hospitality in New York, our dream was to create a café with the atmosphere of a Dublin pub in a bistro environment. We noticed when visiting other European cities we would look for cafés that defined the city we were in with “a sense of place.”
